What exactly qualifies as NOS (new old stock)? Any clarification would be helpful. Thanks,

You are going to get way too much definition here about this.
Just what it means: New old stock.
To me, this means parts made back when a certain part of the actual production run was for the parts department. Packaged then, or at most with in a few year of that.
So, if you are looking at something on Ebay, and it says NOS AND a bar code on the package, well, that was make about 20 years later.
Or, it is known as Ford service parts. Often this is a part that is quite close to original, just made later. Somehow the judgees know this.
Or, it was made on former FOMOCO tooling. Yeah, that too is not NOS in my book. But of course, those selling the piece will say it is.
And remember, back in the 60's, & early 70's, you could get a deal on the parts from the dealer. Like 20-30-40% off the list price. Just because you were a Mustang club meber. Well, all that has gone away, now parts are another profit center. And, you are likely paying above list price for it. So, there will not be a lot of NOS parts laying around for the Fox bodied Mustangs, too expensive.
